Dim Bhapa (Steamed Egg)

Not Boiled, Not Fried.. its steamed egg.. U can taste a whole new level of egg..

For Mixture:
2 eggs
1/2 tsp salt
a dash of white pepper
a tsp of sesame oil
1 tsp of soya sauce
200 ml water

To Granish:
chopped spring onions
Ketchup



Instructions:

Step 1:
Heat water till boiling in a partially opened vessel (if u can catch hold of a handi* it wil be great)Place a sieve on top of the vessel as though its a lid and turn down heat to low simmer.
Step 2:
Beat eggs, water and salt.(Be careful not to generate too much of foam while beating)
Step 3:
Pack the mixture in a deep bottomed steel tiffin box.The box should have a tight fitted lid.
Step 4:
Place the box on the sieve so that its getting all the steam from the boiling water below.
Step 5:
The time it takes to cook depends on heat of the water.
Step 6:
How to know if its done??
shake the dish and it will jiggle but will be firm.
Step 7:
Scrape the steamed egg carefully from the wall of the tiffin box and sprinkle sesame oil, soya sauce and spring onions.

Serve while it is hot.

*A handi is a round pot like vessel, with a neck narrower than the base. It may be made of metal or in earthenware
