Veggy Eggy Crunchy is fried egg with added values of various vegetables. when we r bored with the same old egg fry, it works like a charm.
For Mixture:
Eggs- 4
Yoghurt -few spoons
Pepper Powder
Olive Oil
Salt
For Toppings:
Capsicum-1
Mushroom medium 8 pieces
Potato medium – 1
To garnish:
Coriander leaves
Onion
Soy sauce
Intructions:
Step1:
Cut capsicum, mushroom into very small dice, not mince exactly.
Cut the potato in thin rounds.
Step2:
Beat the eggs. Mix yoghurt, pepper powder,salt.
Step3:
Take a saucepan. Add 3 tsp of olive oil. Wait for the oil to be hot enough.
Fry the vegetables. Keep them aside.
Step4:
Take a deep bottomed saucepan medium small size. Add 2 tsp of olive oil. Pour the egg mixture evenly.
And fry it. While taking the egg fry out, just take a plate, cover the saucepan, and turn it upside down.now u have the fried egg on a plate.
Step 5:
Arrange all the fried veggies on the top. Sprinkle soy sauce. Garnish with coriander leaves. And minced raw onion.
